LuLu’s Mexi-Loco Pie
Serves 8-10
2 cups sour cream
2 tablespoons LuLu’s Loco Spice Mix
or any taco seasoning mix
1 cup LuLu’s Sassy Salsa
or any medium warm salsa
1 ripe avocado
1 tablespoon lime juice, freshly squeezed
2 (15-ounce) cans black beans, rinsed and drained
1 cup cherry tomatoes, quartered
1 cup green onions, thinly sliced including green tops
1 cup black olives, sliced
1 cup fresh cilantro, finely chopped
3 cups sharp cheddar cheese, shredded
Combine sour cream, seasoning and salsa.
Set aside. Peel and chop avocado.
Toss with lime juice in a glass bowl. Set aside.
Spread black beans in the bottom of a 12” glass pie plate. Spread sour cream mixture over beans. Layer cherry tomatoes, green onions, and black olives on top of beans.
Drain avocado and spread on top of other layers.
Sprinkle cilantro over the top and cover completely
with shredded cheese. Best served immediately with LuLu’s Cha-Cha-Cha Chips & LuLu’s Sassy Salsa!
LuLu Clue: If you want to prepare a couple of hours in advance, cover with plastic wrap and refrigerate. When ready to serve, let pie sit for fifteen minutes to allow the cheese to soften.
